Local Sourcing Is an Essential Ingredient

We offer vegetarian and vegan options throughout each of our venues, which helps reduce our carbon footprint and lessen our impact on the environment. In our venues, as well as online menus, look for the nutrition icons listed next to food items including vegetarian and vegan options.
We are proud to support numerous local farms and producers so you can truly get the taste of Sonoma County! Over 20% of all products we purchase are from local farmers and producers. Local food is fresh, healthy, and sustainable.
Waste Reduction
We practice waste reduction in all of our operations from composting, to eliminating plastic, to donating food, and much more. We have made major strides over the years to help reduce waste and divert it from the landfill.
First Let’s Compost

Help Us Sort It Out

We started our composting program in 2012 and have grown the program to include all dining venues. All food preparation (eggshells, vegetable trimmings, etc.) and pre-consumer food waste (food left on plates) is composted by a food mulcher. Every year, 246 tons of waste is diverted from the landfill and recycled back into our environment.
Prior to March 2020, 97% of our materials and packaging were environmental-friendly and compostable and in all venues and catering services.
We encourage you to use the waste receptacles that are located throughout our dining venues to sort waste for compost, recycle and landfill. You can help make a difference by sorting waste into the correct receptacles. We teach our community what goes in each bin with photos located on the bins and through educational events.
Say Goodbye To Plastic Straws

Bring Your Own Cup

We said goodbye to plastic straws in the summer of 2018 and offer compostable paper straws by request only. Paper straws are biodegradable, compost quickly and are less harmful to the environment.
We also said bye to plastic water bottles at all venues, catering services, and vending machines in fall of 2018 to reduce plastic waste. We encourage our community to bring their own reusable water bottles to fill up at the water refill stations located throughout campus. PathWater reusable aluminum water bottles are sold at dining venues on campus.
We reward our community who bring their own reusable cups to our venues with 25 cents off a beverage purchase.
Food Donations That Help

Trayless Dining= Less Waste

We are proud to regularly donate food to the Lobo’s (campus) food pantry. We partner with Join Us Making Progress (JUMP) to donate leftover food to the Orenda Rehabilitation Center. With food donations, we not only reduce our environmental impact but help our community all at the same time.
We have trayless dining, which helps reduce excess food waste as well as reducing energy and water consumption.
Reduce, Reuse, Recycle

We purchase in bulk as much as possible to help reduce packaging and unnecessary waste. We offer reusable utensils in The Kitchens dining hall plus many venues and catering services to help reduce waste.
