Cooking Class: Birria Quesatacos with Pickled Onions

On Tuesday, September 22nd, Sonoma State students joined Executive Chef Don Cortes in The Kitchens for a hands-on cooking class featuring Birria Quesatacos with Pickled Onions. During the hour-long class, students followed along with Chef Don as they learned how to prepare the dish from start to finish before sitting down to enjoy their creations.

The class gave students an opportunity to build their skills in the kitchen while learning the techniques behind a flavorful and popular dish. Students worked through each part of the process, from preparing the ingredients and assembling the quesatacos to creating the pickled onions that accompanied the finished meal.

Held in the demo kitchen at the Chef's venue inside The Kitchens, the class provided a small-group environment where students could cook alongside Chef Don, ask questions, and gain hands-on experience throughout the process. All necessary ingredients and equipment were provided, allowing students to focus on learning, cooking, and enjoying the experience.
