Cooking Class: Chicken Enchiladas

On Tuesday, December 2, Sonoma State students stepped into The Kitchens for an interactive culinary experience led by Executive Chef Don Cortes. The hour-long cooking class offered participants the chance to learn how to make Chicken Enchiladas and enjoy their creations, too.

Part of Culinary Services’ ongoing effort to provide hands-on learning opportunities outside the classroom, the class focused not just on the recipe, but on the techniques and skills that can build confidence in the kitchen. From prepping ingredients to plating the final dish, students gained valuable insight into cooking fundamentals in a supportive, small-group environment.

Held in the demo kitchen in the Chef's venue inside The Kitchens, the class was limited to 10 participants to ensure an engaging, personalized experience. All equipment and ingredients were provided, and students worked at their own stations, guided through each step of the recipe.
