Pasta Carbonara

Ingredients:

  • 2 tablespoon olive oil
  • 1⁄2 cup shallots, diced
  • 10 each bacon, cut into strips
  • 1 clove garlic, chopped
  • 1 pound cooked pasta
  • 2 egg yolks
  • 1/3 cup heavy cream
  • 1/2 cup shredded parmesan cheese
  • Salt and pepper to taste

Directions:

1. Heat olive oil in a large heavy saucepan over medium heat

2. Sauté shallots until softened. Stir in bacon, and cook until bacon is evenly

browned. Stir in garlic then turn off heat.

3. Pour heavy cream in the sauté pan and stir until incorporated

4. Stir in egg yolks until well incorporated

5. Mix-in parmesan cheese

6. Season to taste with salt and pepper
